Zuppa di Cipolle- Onion soup

La zuppa di cipolle e' un classico della cucina invernale francese ed io l'ho riscoperta a Roma quando sul finire del secolo scorso apri' il Cul de Sac la prima vera brasserie francese a due passi da P.zza Navona. La servono credo ancora cosi' in una cocotte di terracotta che gia' il nome del tegamino ti fa sentire coccolato. Cipolle tante, brodo di carne, burro, emmenthal e pane secco possono dare attimi di felicita' e cosi e' stato. Dal numero di ingredienti si evince che e' un pasto completo questo piatto ci sono tante di quelle calorie che bisogna amarsi molto per condividere tanto piacere.
E cosi' fu'. Ho affettato quasi un kg di cipolle per due. Ho soffritto le cipolle nel burro e le ho cotte nel brodo.
Per ottenere la stessa consistenza cremosa si puo' ridurre il volume delle cipolle ed aggiungere un poco di farina al burro realizzando un vero e proprio roux.
Io andavo per le vie brevi cosi' ho fatto stufare una gran quantita' di cipolle.
Nella cocotte ho fatto uno strato di pane.
Ho grattato l'emmenthal sul pane ed ho messo tutte e due i pentolini in forno. 
Il vino per accompagnare questa festa d'amore deve essere rosso e corposo come si addice ad una cena francese. 

Onion soup is a classic of French winter cooking and I rediscovered it in Rome when at the end of the last century the Cul de Sac opened the first real French brasserie near Piazza Navona. I still need it in a cocotte of terracotta, which already makes the name of the pancake feel pampered. Many onions, meat broth, butter, emmenthal and dry bread can give moments of happiness and so it was. From the number of ingredients it is clear that it is a complete meal this dish there are so many of those calories that we must love each other very much to share so much pleasure.
And so it was'. I sliced almost a kilogram of onions for two. I fried the onions in the butter and cooked them in the stock.
To obtain the same creamy consistency you can reduce the volume of the onions and add a little flour to the butter making a real roux.

I went along the short streets so I made a lot of onions stew.
In the cocotte I made a layer of bread.
I scratched the emmenthal on the bread and put both the pots in the oven.

The wine to accompany this celebration of love must be red and full-bodied as befits a French dinner.
